Step through the doors of Casa Santa, and you’re instantly transported. The scent of roasted chiles and warm spices lingers in the air, mingling with the soft glow of pendant lights and the hush of conversation. Lush greenery drapes from above, framing handcrafted woodwork and polished stone. Every element, from the cocktails clinking at the bar to the music weaving through the space, feels curated, inviting and full of soul.
This is Casa Santa, a refined new concept from Paul Aréchiga and the team behind Verde Flavors of Mexico. While Verde’s fast-casual roots have earned a devoted following across Indianapolis, Casa Santa offers something different—something quieter, more intimate and deeply expressive. “Casa Santa was born out of a desire to bring something truly special to the Verde family,” says Paul. “We wanted a place where the design, menu and ambiance all work together to tell a story.” The menu is rooted in tradition but refreshingly modern, drawing on regional Mexican specialties and seasonal ingredients. Think house-made moles, bright ceviches, and upscale street food staples with thoughtful twists. Standout dishes include the birria short rib, crafted with rich, layered depth, and a robust nixtamal tortilla program that grounds each plate in authenticity. “You’ll find familiar ingredients used in unexpected ways,” Paul notes. He adds that the bold and clean agave-forward cocktails easily complement the food as much as they dazzle on their own. Design, as always with Aréchiga’s restaurants, plays a starring role. Inspired by frequent visits to his hometown of Guadalajara, Paul has infused the space with handcrafted details and organic elements that mirror the warmth of a Mexican home, reimagined through a contemporary lens. “Casa Santa is meant to feel like a reimagined version of home,” he says. “It’s beautiful, soulful and rich in culture.”
Paul moved to the Indianapolis area from the suburbs of Chicago in 2007. Now based in Fishers with his wife and two daughters, he leads the Aréchiga Restaurant Group, which operates a growing number of Mexican restaurants in both Indiana and Illinois. While the business has expanded significantly over the years, Paul says the heart of it remains the same. “We’ve built something that not only feeds people but creates lasting memories,” he says. “It’s a team effort. Many of our employees are longtime friends and family.” Casa Santa isn’t just the newest addition to the Aréchiga family of restaurants—it’s an evolution.
